SOUTHWESTERN CHICKEN AND RICE

2 boneless skinless chicken breast, cut into small pieces
1 cup salsa
2 cups water
2 cloves garlic, minced
2 teaspoons cumin
2 cups Minute brown rice, uncooked
1 cup black or pinto beans, drained
1/2 cup cheddar cheese, shredded
Boil chicken in salsa, water, garlic and cumin. Simmer 10 minutes. Return to boil. Stir in rice and beans. Cover. Cook on low 5 minutes. Sprinkle with cheese. Let set, covered, 5 minutes. Serves 4. Per serving: 350 calories, 6 grams fat. Serve with vegetable salad.
