DIJON TURKEY BURGERS

1 pound ground turkey breast
1/2 cup bread crumbs
1 large clove garlic, minced
1 tightly packed cup fresh spinach, chopped
1/3 cup chopped onion
3 T. Dijon mustard Salt and pepper to taste
1 red pepper, sliced 6 oz part‐skim mozzarella cheese, cut into six slices
In a large bowl, thoroughly mix turkey, breadcrumbs, garlic, spinach, onion, mustard, salt and pepper. Shape the turkey into 6 patties. Cover with plastic wrap and chill for 30 minutes.
Grill burgers or saute them in a non stick skillet until turkey is firm and no longer pink in the middle. (Do not overcook or the burgers will be dry). When completely cooked, spread with additional mustard if desired, sliced red pepper and top with slice of cheese. Serve on whole grain buns.
Serves six. Per serving: 300 calories, 8 grams fat.
