CURRIED CHICKEN SALAD

2 cups cooked chicken breast
1 cup brown rice, cooked
4 oz water chestnuts, chopped
1/2 cup celery, chopped
1 cup red grapes, cut in half
1/4 c. fat free mayo
1/4 cup fat free sour cream
1 teaspoon curry powder
1/4 teaspoon black pepper
Combine first 5 ingredients. Set aside. Mix together next 4 ingredients and add to chicken/rice mix. Serve as a main dish salad or stuff a pita half for a delicious sandwich. Serve with raw veggies.
Per 1 cup: 200 calories, 2 grams fat.
